Apple Granola Sandwiches

Sliced Apples! Peanut butter! Granola!

There are only three ingredients in these Apple Granola Sandwiches – my favourite being the peanut butter. Did you know I have an obsession with peanut butter? I eat it out of the jar like nobody’s business.

These cute little breakfast sandwiches are a cinch to make – just slice a whole apple into rounds, slather each slice with peanut butter, and sprinkle with granola. Press the apple slices together – and ta da! You have breakfast to go!

I’ve used my Buckwheat Granola as the filling here – but I also love the warm flavours of Gingerbread Granola. Or use your favourite granola recipe.

Apple Granola Sandwiches are a super fast breakfast to prepare – you have no reason to skip the most important meal of the day! 😉

Ingredients
  • 1 apple, cut into 4 thin round slices (remove any seeds; discard the stem slice and bottom slice)
  • peanut butter
  • granola
Instructions
  1. Slather each thinly sliced apple round with peanut butter. Sprinkle granola onto 2 of the slices, and press the sandwiches together.
  2. Enjoy! Recipe yields 2 sandwiches.
