I’m just popping in quickly to give you a recipe for the end of summer – because the end of summer is all about fresh peaches!
For this recipe, I’ve grilled peaches on the BBQ. Have you ever grilled fruit before?! It is divine. The peaches get soft and melty and the sugars caramelize slightly, leaving pretty grill marks.
To grill peaches, just cut the peach in half, remove the pit, brush it all over with a dot of olive oil (or coconut oil!) and place on your grill, flipping once, for approximately 5-8 minutes, until soft. I’ve then drizzled the grilled peaches with honey and topped with crunchy granola and vanilla yogurt.
Grilled Peach Halves with Granola and Honey make a special variation on a fruit and granola breakfast – or swap the yogurt with vanilla ice cream for a light summer dessert!
Tomorrow I am headed on honeymoon to Italy for 3 weeks – I unf ortunately have not been so organized to schedule posts while I’m gone (as I had hoped!) so see you in 3 weeks!
- 1 peach
- olive oil or coconut oil, for brushing
- vanilla yogurt (or try vanilla ice cream!)
- To grill peaches:
- Cut the peach in half, remove the pit, brush it all over with a dot of oil. Place peach halves on a medium-high grill, flipping once, for approximately 5-8 minutes, until soft.
- To assemble:
- Set grilled peach halves in 2 bowls. Drizzle with honey, and top with a spoonful of yogurt and a handful of granola. Serve.
