Dutch. baby. Might go down as the weirdest name for a pancake EVER.
Despite its odd name, the dutch baby is a pretty little puffed pancake that bakes entirely in the oven. It should really be called the lazy pancake because there is no flipping required – the batter is poured into a cast iron pan, cooked in the oven until it’s impressively puffed, and then cut up like a pizza to serve.

Are you team pancakes or team waffles?
Normally I’m team waffles. But these buttermilk pancakes are so light, fluffy, and smothered in the sweetest sticky triple berry drizzle that I may just change my mind…
Did you know that the term “flat as a pancake” has been around since 1611? (I hope you never had that terrible phrase directed at you!) Even our stone age ancestors were eating pancakes. It’s true.
French Toast you can eat with your fingers! Rolled in a crunchy cinnamon sugar coating and ready to be dunked in maple syrup!
You’ll never guess where this recipe idea came from… my dad! Yep, my parents were on vacation in Phoenix, AZ, eating breakfast in a random cafe and noticed what looked like strips of french toast being carried past them, leaving their lingering cinnamony scent behind…
“Maresa!” my dad said the next time he saw me, “You’ve got to make French Toast Strips for your blog!” And my mom wholeheartedly agreed.
The rest is history. All credit goes to my parents for these French Toast Fingers. 😉
Apple Pancake Rings are sliced apples dipped in cinnamon pancake batter, and fried on either side just like a regular pancake – but these are healthier!
Now that we’ve reached the end of October here in the Pacific Northwest, the days have blurred together in endless shades of grey and drizzle. My rain boots are a constant fixture outside our front door, drying after the end of every day.
I used to dread this dismal season that lasts from October to February. But ever since J proposed to me on a damp, grey day in January, I’ve had second thoughts about rainy days. Rainy days just mean you need to be prepared – you need to put on your rain boots, a rain coat, grab an umbrella and head outside.
It’s February! Can you believe it? The countdown to Valentine’s Day is on!
Over the next couple of weeks I will share some of my favourite Valentine’s Day-inspired breakfasts – because Valentine’s breakfast is way better than Valentine’s dinner, amiright?! Maybe I’m biased, but I’ll take a homemade breakfast in bed over going out for dinner any day. Serve these Fluffy Lemon Ricotta Pancakes to your sweetie with a mug of steaming coffee and watch their face light up with joy.
