Fluffy Scrambled Eggs

These scrambled eggs are a GAME CHANGER. They are FLUFFY and CREAMY and SIMPLE and everything you could ever want in a scrambled egg!

Ingredients

  • 1 tablespoon butter
  • 2 eggs
  • slice of toast
  • goat cheese
  • chives to garnish
  • freshly ground salt and pepper

Instructions

  1. In a small pot or pan, melt butter over low heat. Crack eggs into pan and break up yolks with a wooden spoon.
  2. Constantly stir the eggs over low heat, sometimes taking the pan off the heat if the eggs are cooking too fast.
  3. Eggs will begin to set - keep stirring!
  4. Once eggs are set and still creamy-looking, take off the heat.
  5. Serve scrambled eggs on top of a piece of toast slathered with goat cheese. Sprinkle eggs with chopped chives and freshly ground salt and pepper.
