No-Bake Coconut Energy Bites make a quick breakfast to-go or a filling afternoon snack.

It’s no secret that I eat a Lara Bar pretty much every day. I love them for their simple, whole ingredients, but I don’t love the pricetag! My favourite flavour is the Coconut Lara Bar - so I knew I wanted to take that inspiration and make my own coconut flavoured snack bites! These No-Bake Coconut Energy Bites are inspired by Lara Bars, but are in no way supposed to be a copycat recipe.

I’ve paired coconut, dates, and cashews (the three sole ingredients in Coconut Lara Bars) with a few other nuts for a fuller flavour, and also added in my favourite spices - cinnamon, ginger, and nutmeg. The result is a sweetly spiced coconut energy ball - they make a great breakfast to-go and also a wonderful afternoon snack.

Paleo Sweet Potato Spinach Frittata

For the month of April, J and I are challenging ourselves to eat paleo. That means: no grains, no dairy, and no sugar. Eggs and clarified butter are okay - so we’ve been eating eggs for breakfast every.single.day.

We’re getting creative in the ways we eat our eggs - we’ve had Ham and Egg Cups, Fluffy Scrambled Eggs, fried eggs, poached eggs, and fritattas. I love fritattas because there are always leftovers to heat up the next day for breakfast. Two breakfasts for the price of one!!

For this fritatta I’ve used sweet potatoes (which are paleo-friendly - regular potatoes are not) and spinach. I’ve also thrown in some thin slices of ham, which could be replaced by bacon for even more deliciousness 😉

Maybe don’t make these Lemon Blueberry Scones with frozen blueberries, like I did. I admit that the faint blue hue to these scones is not that appealing! But I’ve recently realised how amazing it is to have frozen fruit in the fridge - it is so much more inexpensive than buying fresh berries, especially in the winter! My giant bag of frozen blueberries was just begging to be used in these scones, and I couldn’t resist.

Chia, chia the magical seed. I’ve already talked about how much I love chia in Overnight Oats, and now we have this magical Vanilla Chia Pudding.

Why is it so magical, you ask? A sprinkling of chia seeds mixed with milk and thrown in the fridge overnight turns into a rich, thick pudding that is a great substitute for your morning yogurt. And, chia seeds are packed with omega-3 fatty acids, which are important for brain health.

Sounds like it one-ups yogurt, wouldn’t you say?! 😉

Breakfast Galette

A cheesy Breakfast Galette wrapped in sour cream pastry with an egg baked onto it - a special weekend brunch!

I have a soft spot in my heart for galettes - the pastry is supposed to look kind of messy, they’re usually filled with fresh seasonal fruit, and they are just so rustic and lovely to look at and taste. In fact, we’re serving fruit galettes as our wedding dessert! So yes I do love them that much.

Here we have another take on the galette - a Breakfast Galette. Similar idea - the recipe uses the same sour cream pastry dough as I make for fruit galettes, but instead of filling the galette with fruit, it is filled with creamy ricotta and mozzarella cheese, and then topped with proscuitto, basil, and a big fat egg.
