 I love this Triple Berry Green Smoothie because it contains a full cup of spinach, and you can't even taste it!

It’s a new year! Have you embarked on any nutrition-related goals? After the indulgences of the holidays, it’s always nice to enjoy a mental reset and eat a little more mindfully. To me, eating mindfully doesn’t mean dieting (I don’t do dieting) but I do pay more attention to what I’m putting in my mouth. And that basically means, eat more vegetables, eat less cookies. Eat more fruits, eat less bread.

A great way to sneak some healthy leafy greens and fruits into your day is to enjoy a breakfast smoothie. I love this Triple Berry Green Smoothie because it contains a full cup of spinach, and you can’t even taste it! Hidden healthiness is never a bad thing 😉

This recipe would be great to serve your kids - they’ll never know there’s spinach hiding in it! And there’s no green colour that gives it away either.

Everyday Green Smoothie

It’s hard to eat your greens in the winter! I love eating salads in the spring and summer, but as soon as winter hits, I am all about the warm cozy food and seriously shun my greens.

But no shunning greens any longer! As soon as I was gifted a Vitamix blender as a wedding present, I became a convert on the green smoothie train. Previously I’d owned a $19.99 blender, which couldn’t puree anything, even soft spinach leaves. Not that you need a Vitamix to make a smoothie - a regular old blender will do - maybe just don’t buy the cheapest blender in the store. 😉

(If you’re on the edge about buying a Vitamix - DO IT. All of your smoothest smoothie dreams will come true. I was on the fence about buying one for YEARS because they’re so expensive, and the first time I used it to make homemade peanut butter in 1 minute flat, I was SOLD. And then the first time I obliterated ice cubes into a frozen margarita, I was SOLD AGAIN. That thing is POWERFUL.)

Spinach and Goat Cheese Quiche

Are a quiche and a frittata the exact same thing except one has a crust and one does not? (I had to google it. They are not the same.)
I am obsessed with frittatas - they are one of my favourite savory weekend breakfasts, since they take a little extra love to create, and the extra time allows me to sit with a hot cup of coffee and the iPad and catch up on my blog feed while it cooks in the oven.

Quiche, however, has all the deliciousness of a frittata with the addition of a buttery, flaky, crust (and a fluffier, custardy filling, as Google has just told me). And it doesn’t get much better than eating pie crust for breakfast, if I do say so myself. 😉 You could make this Spinach and Goat Cheese Quiche with a store-bought frozen pie crust, but I encourage you to make your own.

Sweet Potato Spinach Frittata

Paleo Sweet Potato Spinach Frittata

For the month of April, J and I are challenging ourselves to eat paleo. That means: no grains, no dairy, and no sugar. Eggs and clarified butter are okay - so we’ve been eating eggs for breakfast every.single.day.

We’re getting creative in the ways we eat our eggs - we’ve had Ham and Egg Cups, Fluffy Scrambled Eggs, fried eggs, poached eggs, and fritattas. I love fritattas because there are always leftovers to heat up the next day for breakfast. Two breakfasts for the price of one!!

For this fritatta I’ve used sweet potatoes (which are paleo-friendly - regular potatoes are not) and spinach. I’ve also thrown in some thin slices of ham, which could be replaced by bacon for even more deliciousness 😉

It’s a new year! I hope you had the happiest of celebrations. This year is going to be a BIG one for me - most notably because J and I are getting married in August! (Eek!)

I love the idea of a fresh start, of reevaluating where you’re at, and realigning yourself with what’s important. Although it’s cliched, every January I like to try out a few new healthy recipes and I appreciate my workout routine with renewed enthusiasm (although I detest how busy the gym gets!).
